We were watching the food channel this weekend and they had some sort of cowboy cook off show. Since both my kids are pretty big into cowboys (and cowgirls) these days, I figured I’d fix us a chuck wagon inspired dish for supper. This cowgirl beans recipe was just the thing I was looking for. We had some leftover baked beans from a batch I cooked earlier this week and I always keep a pack of ground beef in the freezer. The dish cooked up pretty quick and it was hardy and good. I just served it with a side of corn muffins and it was a big hit with my little cowboy and cowgirl.
My family isn’t usually too much into beans other than the occasional side of baked beans, but this has inspired me to give other bean recipes a try. As I’m typing this I have a big pot of pinto beans cooking on the stove. I’m hoping they will be as big of a hit as the cowgirl beans. I grew up on plenty of bean, lentil and split pea dishes, but my husband never liked them, so I just never cooked them over the years of our marriage. We’ll see how he’ll react to a few more bean dishes in our diet.
